Mouth watering oxtail recipe with mashed potatoes

Chef Lehlogonolo of Thaweni's Cookery has shared a mouth watering oxtail recipe which can be enjoyed with mashed potatoes.

One of the most loved parts of cattle meat is the tail or oxtail.

Oxtail is tender and has a deep rich flavour.

It has to be cooked long and slow.

Below is the recipe from chef Hlogi.

Ingredients

• Oxtail
• Flour, seasoned with salt and freshly ground black pepper
• Vegetable oil
• 1 big onion
• 4 garlic cloves, peeled and crushed
• 1 cup red wine
• 2 cups beef stock
• Tomato paste
• 1 cup) boiling-hot water
• Brown sugar
• Bay leaf
• Thyme
• Butter beans (canned)
• Spices of your choice.

Method 

1. Trim the excess fat from the oxtail. Pat dry and marinate overnight with spices of your choice.

2. Heat the vegetable oil in a moderate heat. Dust the oxtail in seasoned flour, then add to the pot and colour until golden brown on all sides and remove from pot.

3. In the same pot add onions, garlic, thyme, bay leafs, spices and tomato paste and mix well then add wine and stock.

4. Add your oxtail back to the pot and mix well.

5. Add water, ensure it cover the oxtail.

6. Bring the oxtail to a simmer until cooked (soft, jelly like and falls off the bone easily)

7. Add butter beans for 15mins and remove thyme and bay leaves and you can serve.

Mashed potato recipe

Cut potato into equal pieces;

Boil in salted water – this will season the potatoes all the way through – until potato is very, very soft, jab it with a fork;

Drain, return into pot and mash with butter and milk or cream;

Mash until creamy and fluffy;

Transfer to serving bowl and make waves across the top so you can drizzle with butter and sprinkle with parsley.
