Apple crumble is a classic, warming winter dish and is surprisingly simple to make. As Chef Kevin explains, this recipe should only take around five minutes!
 
Ingredients:
125grs butter
½ cup brown sugar
200grs raisins
2tbsp cinnamon
2 med sticks of cinnamon
2 star anise
4 granny smith apples [peeled and cut into quarters]
 
Method:
Melt the butter in a deep pan, add the star anise and cinnamon and allow to cook until fragrant. Add the apples and raisins and sauté for a further three minutes. Gently toss in the brown sugar and allow to cook until soft but still firm. Remove from the heat and leave to cool.
 
Crumble topping:
100grs butter
100grs brown sugar
100grs cake flour
100grs chopped almonds or almond powder
100grs granola
 
 
Method:
Sift the flour into a mixing bowl; combine with the butter, brown sugar, almonds and the granola and mix until a crumble like consistency is achieved. Spoon the apple mixture into ramekins, top with the crumble and bake at 170 degrees for approximately 20 to 15 minutes or until golden brown on top. Serve warm with a scoop of ice cream or warm custard.
