Easy recipe: make your own sausages

With all the scandal over what's really going into our sausages, Chef Kevin Joseph teaches us how to make our own quick-quick.

Chef Kevin writes: 
 
A big part of the fun in making your own sausage is coming up with new and different blends of sausage spices and seasonings. Start with recipes you know you enjoy, and add or subtract spices and amounts as you experiment.
 
Want more fennel flavor in your Italian sausage? Add a little more to the next batch.
 
Remember to keep a record of what you have done though, so you can duplicate your winners or tank your losers. There are certainly many more sausage spices. This is the selection that I have on hand and enjoy. You will likely develop favorites of your own as you experiment for yourself. 
 
HOMEMADE SAUSAGE RECIPE
 
2 KG ground beef/pork/mutton or chicken
 
1tbsp BBQ spice
 
2 tsp dried sage
 
½ tsp dried thyme
 
1 clove garlic minced
 
¼ tsp ground coriander
 
1 tbsp fine brown sugar
 
2 tbsp, onion paste
 
1 pinch of ground cloves
 
1 pinch of mace or ground nutmeg
 
½ tsp ginger powder
 
¼ cup bread crumbs
 
Salt and pepper to taste.
 
METHOD:
 
Combine all of the items together, mix well and shape into sausages and bake in the oven or use a pan to fry.
