Easy recipe: make healthy salsa

Jane Linley-Thomas and Chef Kevin Joseph bring you an easy and healthy mushroom salsa, which can be served in dozens of different ways. Chef Kevin's suggestions are with french bread, a side order with nachos or as an accompaniment to a piece of chicken, with fish or with cold meats.

Ingredients: 

2 medium tomatoes
250grs fresh white mushrooms chopped
1 med to large red bell pepper
1 med red onion finely chopped
¼ cup fresh lime juice
2 tbsp olive oil
2 tbsp chopped fresh coriander
1 red chili finely chopped
1 clove garlic thinly sliced
Salt and pepper to taste
 
METHOD:
Skin and core tomatoes and cut in half, gently squeeze out the juice and deseed before placing in blender. In a large mixing bowl combine the mushrooms, red pepper and onions. Add in the lime juice, olive oil, coriander, garlic, red chili and toss gently.  Remember to remove the veins and seeds from the red chili as they contain the capsaicin, that’s the compound that gives chilies their heat. Season with salt and pepper to taste before serving. Serve with crusty fresh bread or as an accompaniment to a cheese platter or some good quality cold cuts.
