Keri's gluten-free, two-minute brownie in a mug is amazing!

This easy, delicious, two-minute microwave treat is all you need to win your friends and family over!

Not only is this one of my favourite go-to desserts, but whenever I go to a friend's place and I forget to bring something, I whip out these ingredients and get microwave 'baking!'

This gluten-free, two-minute brownie in a mug recipe doesn't even need an oven!

Ingredients

  • 1/4 cup gluten-free flour (or normal flour if you’re a gluten lover)
  • 1/8 cup honey (you can use coconut blossom - or if you use sugar, up to ¼ cup sugar)
  • 2 tablespoons unsweetened cocoa powder (raw cacao works beautifully)
  • Pinch salt
  • 2 tablespoons coconut oil (or any other vegetable oil)
  • 2 tablespoons milk (almond or normal), you can also use 2tbps coffee or water

Instructions

  1. In a microwaveable mug, stir together the dry ingredients until no lumps remain.
  2. Stir in the oil and milk until you have a thick paste.
  3. Microwave on high for a minute, checking it after 30 seconds (microwaves vary). It will be done when it’s springy on top but still a bit gooey — like the very best brownie.

Enjoy while it's still warm. NO jokes, this is delicious, I make it every time I go to a friend who has a microwave. ♥
