This dish is a firm favourite in our home at Chrismas. The aroma travels  through our house and outside into the nostrils of arriving guests.

They're ready to dig in as soon as festive greetings are done. 

My mum is a patient cook and takes care of every dish she prepares from start to finish. I guess that's what makes her an incredible cook. Her heart is on every plate.

This mutton curry recipe will keep your family and friends coming back for more.

Every mouthful is stomach satisfying. I can't help but wolf down two helpings! 

Jane's lick-your-fingers mutton curry

Cooking time: 45mins

Serves 4-6

1 large onion 
2 tsp masala 
500g cubed lamb 
1 stem of curry leaves
1 tsp turmeric powder 
1 tsp dhania powder 
1 tsp jeera powder 
1 tsp Garam masala 
2 cinnamon sticks 
2 bayleaves 
50ml oil 
2 tomatoes peeled & sliced 
2 tsp ginger & garlic paste 

Method 

1. Heat oil with cinnamon sticks, bayleaf & curry leaf
2. Add onion and curry leaves & fry till golden brown
3. Add tomatoes, mix & leave to simmer uncovered
4. Once the moisture has evaporated add all spices except Garam masala
5. Mix & add the meat, ginger & garlic paste, salt to taste, mix well, cover & cook
6. Add 1 cup hot water mix and cook
7. Microwave 3 potatos for 10 mins, peel, cut in quarters and add to the curry
8. Reduce heat & cook until meat is tender & gravy is thick, add the garam masala simmer for 5 mins, switch off. Leave pot on the stove with lid covered.
9. Garnish with chopped coriander & serve with rice and sambals.
