World Baking Day: Thandolwethu shares her favourite vegan brownie recipe

Our very own Zulu vegan, Thandolwethu, thinks this plant-based black bean brownie is the bomb dot com.

Today is World Baking Day. To celebrate, Thandolwethu is sharing one of her favourite recipes. 

Finding the perfect brownie recipe - let alone a vegan one - is no easy task. It needs to have the right amount of gooey without being too sweet and causing a cavity! 

Thandolwethu thinks she has found a brownie recipe that will end your search for the best vegan brownie. 

"I tried these out last month and they were really, really good. It's all one bowl and you can find all these products locally," she says. 

Thandolwethu's talking about these black bean peanut butter brownies by vegan blogger Carliegh. Not only are they decadent, but they are healthy, vegan, and gluten-free!

You only need six ingredients for the recipe:

1 1/2 Cups Black Beans Rinsed
2 Tbsp Cocoa Powder
1/2 Cup Rolled Oats
1/4 Tsp Salt
1/2 Cup Maple Syrup
1/4 Cup All Natural Peanut Butter
1/2 Tsp Baking Powder
1/2 Cup Vegan Dark Chocolate Chips

"Combine all ingredients in a food processor, adding chocolate chips and/or nuts in at the end. Then press into an 8-9 inch pan lined with parchment paper, and cook for 15-18 minutes at 350F (176°C)," Carleigh wrote on Instagram.
