Schools will start re-opening next week and one of the biggest headaches for many parents is deciding what to pack for lunch. 

The Department of Basic Education announced this week that government schools in coastal provinces will open on January 19 while schools in inland provinces will start on January 12. 

Now is the perfect time to get a head start on school preparations. Make a weekly lunch menu so you never run out of ideas or have to think of something at the last minute. 

These vegetarian recipes are the perfect addition to your child's school lunch boxes.

Corn, cheese, and spinach sandwich

There is no better way to get more vegetables into your children's meals than with a little cheese! The Terrace Kitchen shared this delicious corn and spinach sandwich on her YouTube channel. It's quick and easy to make. 

All you need is:

  • Spinach
  • Sweet corn
  • Spices
  • Cheese
  • Bread

Homemade vegan "chicken nuggets"

Kids love nuggets! They are great finger foods that can be dipped in delicious sauces. YouTuber Liv B has a great recipe you should try. 

You can use an Instant Pot or make these nuggets on the stove.
