Sticky Chicken Drumsticks served with ALLSOME Rice (Serves 4)

Ingredients 

  • 1 kg chicken drumsticks, rinsed
  • 20 g spring onion, thinly sliced
  • 1 Tbsp toasted sesame seeds (Optional)
  • 1 cup uncooked ALLSOME rice

MARINADE* (Mix together in a bowl)

  • 1/3 cup of soy sauce
  • 1/4 cup honey
  • 3 Tbsp rice wine vinegar (regular white vinegar is a non-alcoholic option, use 2 Tbsp)
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 Tbsp toasted sesame seeds
  • 1 tsp Sunfoil Sunflower oil 
  • A few sprinkles of ground black pepper

*If you like extra sauce for the rice, double the marinade recipe. Reserve the extra marinade and gently simmer in a saucepan on the stove top until it’s reduced slightly.

Instructions

  1. Put the chicken into a large Supa Mama freezer bag and add the marinade. 
  2. Seal the bag and vigorously shake the bag and massage the chicken so that the marinade covers the chicken pieces well. Marinate it for at least 30 minutes in the fridge. Four hours is ideal. Overnight works well too if you prefer to prepare ahead. 
  3. Preheat an oven at 180 Deg C for 20 mins. Remove the chicken from the fridge. Place a piece of Supa Mama Baking Paper onto a baking pan (or roasting tray) and line up the chicken pieces. Make sure each piece is separate – ie. that they’re not stacked up on top of each other. Place the tray into the oven and bake it at 180 deg C for 12 minutes.
  4. Take the tray out and turn the chicken over, then place it back into the oven, baking it for another 12 minutes or until the chicken is fully cooked. 
  5. Garnish with the sesame seeds and spring onion.  Serve with your ALLSOME Rice, prepared as per package instructions.

Time-saver Tips 

  • Marinate the chicken drumsticks overnight in the fridge for added flavour. 
  • You can prepare and refrigerate (overnight) your ALLSOME Rice or freeze it (flattened in a Supa Mama freezer bag) for up to 3 months. 
  • To freeze: Place in a freezer bag. Flatten for easy storage and quicker thawing later. To thaw: Thaw in the fridge overnight.
  • To cook: Heat in a saucepan over medium high heat, stirring occasionally, until heated through.
