Mielie Bread Breakfast Surprise
Ingredients:
Bread
6 tsp white sugar
1.5 tsp salt
3 cups self-raising flour
3 eggs, beaten
2 tins whole kernel sweetcorn
1 Tbsp butter
Scramble
2 eggs per person
1/2 cup cream
2 Tbsp parsley, chopped
saly and pepper
500g smoked trout,sliced
To serve
1/2 smoked trout per person
Asparagus
Method:
Sift sugar, salt, flour into beaten eggs. Mix well. Blend contents of tins, incl liquid, roughly in food processor. Mix well into egg-flour mixture. Bake in greased loaf tin at 180c until knife comes out clean - about 1hr 15 mins. Slice mealie bread, fry in butter until golden. Make scrambled eggs with cream and parsley. season. Top mealie bread with egg, smoked trout, asparagus.
