2026 Sardine Run: How to keep your sardines fresher for longer
Updated | By Poelano Malema
As thousands of South Africans head to KZN for the 2026 Sardine Run, here is how to keep your catch fresher for longer.
The KwaZulu-Natal Sardine Run has officially begun, drawing visitors from across South Africa to witness one of nature’s most spectacular events.
Apart from the excitement it brings, sardines are also packed with health benefits. They are rich in omega-3 fatty acids, protein, calcium, iron, zinc, vitamin D and several other essential nutrients, making them a great addition to a healthy diet.
For those hoping to catch their own sardines, it is important to fish responsibly, wear appropriate protective gear, and ensure the fish you catch are indeed sardines.
However, not everyone will be heading to the beach. During the sardine season, fresh sardines often become available at local markets and roadside vendors, making it easier for people to enjoy them without getting their feet wet.
Because sardines spoil relatively quickly, knowing how to identify fresh fish is essential.
How to spot a fresh sardine
- One of the easiest ways to identify a fresh sardine is by looking at its skin. The flesh should feel firm to the touch and spring back when gently pressed.
- The skin should also appear shiny with a natural metallic sheen.
- Another good indicator is the scales. Fresh sardines typically have scales that remain firmly attached to the body.
- The eyes also a clear indication of how fresh the sardines are. Look out for clear and bright eyes rather than cloudy or sunken.
How to tell if a sardine is no longer fresh
- Your nose can often tell you a lot about the quality of fish. Fresh sardines should have a clean, ocean-like smell. If the fish has a strong, sour, or unpleasant odour, it is best to avoid it.
- The texture can also be a giveaway. If the flesh feels soft or mushy, the fish is likely no longer fresh.
- Discoloured skin and dull-looking eyes are additional signs that the sardine may have spoiled.
How to keep sardines fresh for longer
- Sardines should be placed on ice as soon as possible after being caught or purchased.
- Once home, rinse them thoroughly with clean water and pat them dry before storing them. Some people lightly salt their sardines before refrigeration, which may help preserve them for a little longer.
- If you are not planning to cook them immediately, consider wrapping them individually before storing them in an airtight container in the refrigerator.
- For longer storage, freezing sardines shortly after purchase is one of the best ways to preserve their freshness and nutritional value.
