Roxi Wardman's champagne cheesecake recipe

Roxi Wardman, who won the 2014 edition of MasterChef SA, created her Captain’s Champagne Cheesecake, with a Cherry Brandy Compote, especially for the East Coast Radio House & Garden Show

The bespoke recipe was inspired by the Vodacom Durban July theme ‘Captain’s Table'. 

Here's Roxi's recipe: 

Captain’s Champagne Cheesecake, with a Cherry Brandy Compote

Crumb Ingredients:

250gr flour
100gr butter
50gr cocoa powder
2 sprigs fresh thyme
100gr brown sugar

Method:

Mix all ingredients together
Rub in butter
Press into 15 cm×15cm size dish
Place in the oven and bake for about 10min at 180°C

Champagne Cheesecake Ingredients:

250gr cream cheese
125ml cream
180ml rose champagne
350gr white chocolate

Method:

Melt chocolate, let it cool slight and beat into cream cheese till smooth
Stir in champagne
Whip cream and fold into cream cheese mixture
Pour on top of baked crumb
Let it set in fridge for 1hour before serving

Cherry Compote Ingredients:

250gr cherries (pitted)
100gr sugar
50ml brandy

Method:

Chop up cherries
Put cherries sugar and brandy in a saucepan and bring to the boil, then turn down heat and simmer until it has reduced and has a sticky consistency
Allow to cool completely before drizzling over champagn cheesecake mixture

Decorative Chocolate Cherries Ingredients:

Cherries
White chocolate
Gold leaf 

Method:

Melt chocolate
Dip cherries into chocolate
When set place gold leaf on the cherry
Gently position in the middle of the dish
